Quince jelly and it's almost enough, it's so generous. There's more honey, in the springtime, floral style. The nose is concentrated in fragrance, leaving nothing to show for its power. Next comes a dessert topped with liquid caramel. Each stage, with sufficient aeration, brings its share of gourmandise, one replacing the other. The caramel becomes milky and thick.
Slight dryness on the finish, balanced by the orchard fruit syrup. There's a hint of ginger that warms the mouth. Slowly it becomes more mineral, but the palate remains fresh, with a hint of menthol.
Good aroma retention, with a blend of minerality, a little chalkiness and citrus fruit. Slightly woody, spicy return. A moment of sweet smoke remains, along with a more saline hint.
